In addition to the famous Italian “Chiacchere” one of the most typical sweets in this period are the Carnival Castagnole.
Here’s the quick and easy recipe to cook them at home.
3 whole eggs
1 teaspoon of vanilla yeast
1 grated lemon
Oil for frying
Put in a bowl the butter, add the sugar and then the eggs, one at a time.
Add the grated rind of lemon, a pinch of salt and enough flour, to have soft and smooth paste. At the end, add the yeast.
When the dough is ready formed some balls with your hands.
In the maintime boil the oil and when it is ready fry the “castagnole” until they take on a golden color.
With the help of a slotted spoon remove them from the oil and put them to dry on absorbent paper.
Before serving, sprinkle with plenty of icing sugar.
In some Italian regions we use to eat them with dark chocolate melted.
